A few weeks ago, I set out on an exciting journey to Denver to catch the 25th Anniversary of the Miss Lauryn Hill and the Fugees concert with my friend Amber. The adventure started with an early flight, landing me in Denver several hours ahead of Amber. Eager to explore, I discovered that there was a train that conveniently traveled from the airport to downtown Denver for only $10! Yes please!

Navigating the train app proved slightly challenging until a random girl generously handed me her train pass the use. Thank you, mystery girl! Boarding the train, I was captivated by the breathtaking mountainous views. Imagine waking up to those snow-capped peaks every day – absolutely stunning!

Upon reaching Union Station, I found a delightful array of amenities – a coffee shop, breakfast spot, cocktail bar, bookstore, and an Italian restaurant. Naturally, my first stop was the Pigtrain Coffee Company, where I savored a delicious seasonal latte. A Vanilla Biscotti Latte made with vanilla, lemon, almond milk, and star anise. So good!
Next up was a mouthwatering breakfast sandwich from Snooze Eatery. I ordered the Double Bacon Sandwich | A soft brioche bun layered with Havarti cheese, Snooze signature bacon, and seared cider-braised habanero pork belly. Topped with an over-medium cage-free egg, Dijon citronette-dressed, arugula, and pickled red onions. Served with house-made chipotle aioli and bread & butter pickles. Very very tasty.

A short stroll led me to Dairy Block, formerly Windsor Dairy, now a “vibrant micro-district that boasts 11 shops, 19 restaurants, eight bars, a luxury coworking space, and a 172-room hotel.” I stopped into Lo Bakery Dough, a small batch bakery, focusing on local and organic ingredients. I picked up a couple of cookies and a few pastries. All of which were delicious.

As I left the bakery, a text from Amber signaled her arrival. Back at Union Station, we reunited, officially kicking off our kid-free weekend. Cocktails at Ultreia marked the beginning of our Denver adventures before hopping in an Uber ride to the luxurious Four Seasons Hotel. After popping a bottle, we caught up and ended up losing track of time – only to realize we missed our dinner window.

Quickly changing clothes, we headed to Ball Area for the Lauryn Hill concert, only to have the show start two hours late. The hunger was real, y’all – we could have eaten! Despite the unexpected delay, the concert turned out to be fantastic, making it a memorable experience.
Stay tuned for Day 2 of our Denver adventures!
