Diced & Easy: Meals in 20 Minutes or Less

I had the opportunity to try the Farmer’s Market Salad and the Tuscan Salad. Both were very fresh and had the perfect salad dressing to accompany them. I also sampled two of their grain bowls, the Kale and Wild Rice Bowl and the Chickpea Curry Grain Bowl. I loved both! The Kale and Wild Rice Bowl was my favorite. The flavor combination was so on point!

My box also included a fresh fruit snack cup and a carrot snack cup. My daughter and I snacked on them while we were preparing dinner. Those carrots were so crisp and sweet!

2. Choose how many you are feeding for each meal (2,4, or 6).

3. Choose a cuisine category. They are currently offering three world cuisine category options, including Asian, Italian, and Tex-Mex. Be on the lookout for future options including, All American, Indian, and Middle Eastern cuisine kit categories.

4. Select one, two, or three cuisine category kits based on your family’s preferences and how many recipes you want per week.

My Diced & Easy meal kit included the Tropical Black Bean Rice Bowl. It came with some fresh diced peppers, tropical salsa, fresh cilantro, two ears of corn on the cob, one avocado, one lime, organic black beans, whole grain brown rice, and seasoning. The instructions were super easy and saved so much time in the kitchen! It literally took 20 minutes to prepare! And it was delicious! The veggies were very fresh and the salsa was nice and bright tasting. And again it was so EASY to prepare!! Diced & Easy is definitely a game-changer in the kitchen!

Tropical Black Bean Rice Bowls

Cook Time: 20 minutes

Ingredients:

1/2 cup brown rice

1 Tbsp cooking oil

6 oz tri-color pepper, diced

2 oz corn off the cob

14.5 oz can black beans

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp paprika

Juice of 1 lime

Salt to taste

.25 oz cilantro, chopped

1 avocado

3 oz tropical salsa

Instructions:

Heat cooking oil in a large nonstick skillet over medium heat. Add the bell peppers. Slice the corn off the cob and add to the skillet. Sauté for three minutes. Drain and rinse the black beans, then add to the pan along with the cumin, garlic powder, and paprika and cook for two minutes more, stirring often. Stir in lime juice and salt to taste then, fold in cilantro.

Microwave rice according to package instructions. Divide rice and two bowls and top with black bean combo. Serve topped with sliced avocado, the salsa, and extra lime wedges.

This delicious meal was delivered to my home, pre-prepped, and included this very easy recipe! As a homeschool mom who also works from home, this service that Diced & Easy provides is so valuable when it comes to the amount of time I spend with my daughter. It was nice to spend a very small amount of time preparing dinner, then having more time to sit and talk to my daughter over dinner. Even more convenient is that the meal came straight to my doorstep.
