It’s the first day of Fall y’all! I just love the flavors of fall. It just makes me want to get into the kitchen and get creative. I recently picked up a couple of acorn squash at my local farmers market and decided to bring in the Fall season with a recipe using them. This recipe is super easy and customizable as well. You can season the squash and egg however you like. I suggest getting creative with your toppings as well. Have fun!
Acorn Squash Egg in a Hole
1 acorn squash, ends removed, sliced into four ½- to ¾-inch slices
1 tablespoon unsalted butter, melted
½ + ¼ + ⅛ teaspoon sea salt
¼ teaspoon ground black pepper
4 large eggs
2 slices turkey bacon, cooked and finely chopped
Preheat the oven to 400°F. Brush both sides of the squash slices with melted butter and place them on a baking sheet. Sprinkle the squash with ½ tsp salt and the pepper and bake it until tender–about 15 minutes. Remove from the squash from the oven, crack 1 egg into the middle of each squash, and sprinkle the eggs with ¼ teaspoon of the salt. Return the squash to the oven and bake it until the eggs are set–12 to 15 minutes. Remove from oven and top with chopped bacon.
