In honor of one of my favorite days, National Grilled Cheese Sandwich Day, I made this most delicious sandwich. I’ve had my share Grilled Cheese Sandwiches. It was a family favorite, growing up in Ohio. My Mom would make them to with a pot of homemade soup on those brutally cold winter days. Mmmm. So good and comforting.
And then there’s the cheese factor. In LOVE cheese!! It’s like the best thing ever! The hardest part about making this sandwich was deciding on a cheese. So there I stood at the farmers market staring at a multitude of various cheeses. My first impulse was to get smoked Gouda. It’s one of my favorite cheeses. But I wanted to go for a softer cheese. So I went with Muenster cheese. It’s awesome when used as a melting cheese. I also grabbed sliced Coby Jack cheese to go with it. I chose Italian bread for my sandwich because it toasts up beautifully. For added pow, I got a tomato to slice up and also add. With all ingredients in hand I headed home to make this soon to be devoured Grillled Cheese Sandwich.
Cheesy Grilled Cheese Sandwich
makes 1 (not for sharing!)
2 slices Italian Bread
1 slice Muenster Cheese
1 slice Coby Jack Cheese
2 slices tomato
unsalted butter
Butter one side of each slices of bread.
Layer cheeses and tomato on the unbuttered side of bread.
Top with other slice. Buttered side up.
Heat non-stick or cast iron skillet.
Place sandwich in skillet. When bread is golden, flip over. Once the other side of bread is also golden, the cheeses should be nice and melted.
Remove from pan and enjoy!
