Moms Meet Review:  Himalaya Botanique Complete Care Toothpaste

Flavor Your Life With Authentic European Extra Virgin Olive Oil  

I love to cook with olive oil. In fact,  I use it every day. It’s pretty much a staple in my pantry.  Recently some concerns have been raised about the authenticity of olive oil here in the US. That’s right, FAKE EVOO!! This happens when olive oil is extracted from one country and then shipped to another, then is blended with oil from other places before being packaged. Unfortunately, some olive oils are severely diluted with other low grade oils. Even worse blended with outdated olive oil. Yuck.

Today, I used Zucchi’s 100% Italian Extra Virgin Olive Oil in my recipe. I loved the flavor profiles of all the varieties I received. AMAZING!! I could totally see myself just dipping some freshly baked bread into a bowl of this awesomeness. It really is that good. I thought any one of these varieties would be perfect for this dish. This recipe is super easy and can be made in 30 minutes! 

Sweet Potato, Carrot & Kale Hash

6 servings


6 cup sweet potatoes, peeled and diced

2 cups fresh carrots, peeled and diced

2 cups onion, diced

2 cups kale, chopped and lightly sautéed 

1/4 cup Zucchi 100% Italian Extra Virgin Olive Oil 

2 garlic cloves, minced

1 tbsp Shawarma seasoning

1 1/2 tsp pink Himalayan salt


Combine all ingredients in a large bowl and toss.

Transfer to a large skillet and spread evenly.

Put in oven and bake of 20 minutes or until sweet potatoes are soft.

Shrimp with Tiger Sauce-Home Chef Review

Today’s post is brought to by another incredible meal from Home Chef. Yes! Last month I raved about this service when I made Baja Fish Tacos. This time I made Shrimp with Tiger Sauce and Charred Sugar Snap Peas.

This experience was just as amazing. Before taking on the box of tasty ingredients, I read through the entire recipe as suggested. I also rinsed all of the product to be used. Now it was time to cook!

The recipe started with the preparation of the Jasmine Rice. I LOVE Jasmine Rice!! It’s so fragrant! I knew that it would be perfect for the flavors that I was working with. 

Next, I had to prepare the snap peas, by removing their strings. I also thinly sliced the green onions then set them aside to sear the shrimp. After cooking the shrimp until charred, I removed them from the pan. Now this is the part I loved, the recipe said to use the pan I just cooked the shrimp in, to cook the sugar snap peas in! Yes! With the exception of the Jasmine Rice, this meal is made in just one pan. I love it!! 

After cooking the sugar snap peas, I removed them to a plate and finished the shrimp. (In the same pan!) After adding the remaining ingredients that made the Tiger Sauce, I was ready to plate! Top to bottom this delicious meal only took about 30 minutes! Amazing!

We are well into Spring and I can’t be anymore happy.  Atlanta weather has been a little shady lately to say the least. In the last three days we’ve had tornados, severe thunderstorms, and wind advisories. Yesterday, a huge tree fell across the street I live on. It’s been crazy! Today the sun finally came out and sky was blue. FINALLY!  It was still quite windy though. When I opened the pretty green box that contained the awesomeness that I was soon to devour, I was excited to see that there were three bags of the most plump and hearty pecans I have seen in a long while. Somebody get me some scissors! I very quickly found a pair and got to business. That first pecan was so amazing, and so was the several handfuls that I scarfed down after it.  Ahhhhh! So good! I rolled the bag of deliciousness up and asked the Mini Me to put it back in the box and slide it under the bed.  The pecan’s days were numbered. We both knew it.

Since Wednesday the pecans as made its way into oatmeal, salad, and tonight a pan of brownies.  Yummy! Pecans are the perfect addition to many of your favorite meals. Not only are these pecans they delicious, they pack full of some pretty impressive nutritional benefits.  Pecans are an excellent source of vitamin-E, and serveral impotant B-complex groups of vitamins such as niacin, B-6, and riboflavin.  They are also rich in minerals such as iron, zinc, and calcium.

Cinnamon Pecan Rolls Featuring Purely Pecans Pecan Butter

April is National Pecan Month! Yes! Everyone stand and join in a round of applause for the almighty pecan! As you can see I’m a major fan of this amazing tree nut. This love started at a very early age, sitting around the table with my parents, cracking shelled pecans one by one, enjoying each other’s company. I always looked forward to my mother picking up a bag from the grocery store. Today, I enjoy an occasional nut cracking session with my daughter. I am very excited about National Pecan Month to say the least.

I want to introduce you to a pretty awesome company, Purely Pecans. They were very nice to send me nice package that included this very tasty Pecan Butter. I immediately wanted to taste it. I opened it up and just like the jar said it was 100% pure pecans. Wow!  So how exactly can you use pecan butter? Well the possibles are endless, if you’re the adventure type in the kitchen. I incorporated Purely Pecan Butter in some homemade cinnamon rolls. They were pretty amazing!

Cinnamon Pecan Rolls

1 cup warm milk

1 Tbsp Active Dry Yeast

2 Tbsp Sugar

1 tsp sea salt

3 Tbsp salted whipped butter

1 egg

3 cups unbleached all-purpose flour


1/4 cup melted butter

1 cup brown sugar

1/2 cup Pure Pecans Pecan Butter heated

2 Tbsp ground cinnamon

1 tsp ground ginger

Brown Sugar Glaze

1/2 brown sugar

2 Tbsp butter

1 tsp vanilla

1 Tbsp milk

1/8 tsp salt

Combine warm milk, yeast, sugar, salt, egg, and butter in a large bowl. Let set for 10 minutes.

Add flour and mix with wooden spoon until dough pulls away from the sides of the bowl.

Turn onto a lightly floured surface and knead for 15 minutes.

Transfer dough to a lightly greased bowl.  Cover with tea towel and let set for 1 hour. Dough should double in size.

Punch down on dough and turn onto lightly greased surface. Roll dough into a 12X18 rectangle.

Brush butter over dough. Pour pecan butter over butter and spread evenly. Mix brown sugar and cinnamon, then sprinkle on top of pecan butter.

Roll dough tight lengthwise until you get a long roll. Cut dough with a sharp knife into 12 one inch slices.

Place slices into a pan, cover and let rise for 30 minutes.

Pre-heat oven to 325 degrees. Bake rolls for 15 minutes or until golden on top.

While cinnamon rolls are baking prepare Glaze.

Combine all ingredients into saucepan and heat until boiling. Let cool.

When Cinnamon Rolls are golden, remove from oven and drizzle with glaze.

Let cool, if you like, or enjoy immediately!

I was captivated by the packaging before I even tasting the teas. The tins were wrapped in linen paper labels with historic pictures on them. With a visual of colonial times I was ready to be transported to the days of the tea craze.

The first tea I experienced was the Masala Chai, a blend of black tea, ginger, cinnamon, and cardamom. I used the suggested recipe on the back of the tin. 
1/2 cup milk

1/2 cup water

2 tsp honey 

1 tsp Masala Chai

Brew in pot, strain, and enjoy.
At the first sip, it went straight to the top of my list of favorite chai. It’s sooo good and it smell divine! I’m a forever fan. I had the opportunity to visit a local high school and teach a tea lab to their culinary arts students. They made a pot of Masala Chai and was skeptical about the milk part at first. But when they tasted it, all of them loved it. Some even asked for some to take home to make for their parents. That put a smile on my face!

The next tea I have to tried was Key Lime, a blend of Large leaf green tea, blue mallow flowers, and key lime flavor. And no it does not taste like key lime pie. It is however a very refreshing, mellow tea. I really enjoyed it. A very nice sipping tea.

The last tea was the West Indies Citrus, a blend of orange peel, lemongrass, lemon peel, and rose hips. Also a very chill blend. I have enjoyed this tea several nights in the month of January. The smell of it just puts me in a very relaxed mood. It’s the perfect tea to enjoy before turning in for the night.

First Fresh Chicken Sausage | Chicken Sausage & Cheese Waffles + Deep Dish Chicken Sausage Pizza

The other day,my daughter wanted breakfast for dinner, as she eyed the First Fresh Chicken Sausage that just had arrived at our doorstep. I see you Sage! She loves making waffles with the waffle maker, so that’s what she wanted. Then I thought, why not kick these waffles up a few notches! Let’s add some of this great looking Chicken Sausage Breakfast Links to the waffles. Hey, while we’re getting fancy, let’s throw in some cheddar cheese too!! Oh yea. This is gonna be a winner!!


So this recipe is super easy and fast to make! Just prepare your favorite waffle mix according to directions on the box. I used Hungry Jack. Then prepare 4 chicken sausage breakfast links according to package. I cooked mines in a non-stick pan. After it’s cooked just chop it up and throw in the bowl with the waffle mix. Then add 1 cup of cheddar cheese. More if you’re feeling real cheesy! Mix it all up. Then use your waffle maker to make the waffles! Easy! I put some fresh strawberries and maple syrup on top and devoured it! Yummy!

Chicken Sausage & Cheese Waffles

2 cups Hungry Jack Waffle Mix

1 1/2 cup water

4 First Fresh Chicken Sausage Breakfast Links, cooked and chopped

1 cup cheddar cheese

Combine all ingredients in bowl. Cook in waffle maker. 


This chicken sausage is so good! The awesome thing about it is that they use locally grown farm fresh ingredients to make them!  They are also gluten free! BONUS!! When cooking with these sausages, the options are endless! Try adding it to your meatloaf like Randy at Atlanta Food Critic did with his Chicken Sausage Meatloaf. Looks good Randy!!
