Keto Cranberry Lemon Loaf Featuring Steviva Blend

I took The Steviva Holiday Keto Blogger Recipe Challenge and created a Keto Cranberry Lemon Loaf. It’s the perfect bread for holiday entertaining! This recipe uses Steviva Blend, a combination of erythritol and pure stevia in granular form. It’s twice as sweet as sugar so you can use half as much. Plus, Steviva Blend contains zero carbs and calories, and no glycemic impact.

When baking, replaces table sugar about 2 for 1 (2 cups of table sugar = 1 cup of Steviva Blend).

How’s it taste? I personally loved the taste. I especially loved that there wasn’t an aftertaste . I definitely recommend using Steviva Blend as a natural no calorie replacement for sugar.

Keto Cranberry Lemon Loaf

Makes 1 loaf

INGREDIENTS

1 cup unsalted butter room temp

3/4 cup Steviva Blend

3 ounces cream cheese room temp

4 large eggs room temp and lightly beaten.

2 tsp vanilla

2 cups unbleached all-purpose flour

¼ tsp sea salt

1 tsp baking powder

2 Tbsp lemon zest

1 1/2 cup fresh cranberries

Directions

1. Preheat oven to 350 degrees F.

2. Butter and flour a 9 x 5 x 3 cast iron loaf pan.

3. In a medium bowl combine the flour, salt, and baking powder. Stir to combine.

4. In a large bowl, cream the butter until light and fluffy with a hand mixer.

5. Add in the Steviva Blend, mix to combine.

6. Add in the cream cheese, mix to combine and until light and fluffy.

7. Add in 1/2 of the eggs, mix. Add in remaining eggs, mix.

8. Add in the vanilla and lemon zest. Mix to combine.

9. Add and mix in the flour mixture one spoonful at a time.

10. Mix until batter is smooth. Fold in cranberries.

11. Pour batter into prepared pan.

12. Bake for 70-75 minutes. Or until a toothpick inserted in center comes out clean.

13. Let cool completely.

14. Slice and enjoy.

The Great American Lobster Festival 2018| Detroit, Michigan

The Midwest’s largest lobster and seafood festival landed in Detroit, Michigan today. The Great American Lobster Festival kicked off their 3 day festival in a most delicious way. I was excited to be in attendance to take part in the Lobster Meal Experience. And oh what a delicious experience it was.

The Lobster Meal Experience

The festival was presented by Lobster Gram, who flew in live lobster from the cold waters of the East Coast. This lobster was AMAZING! It tasted so sweet and fresh. I enjoyed the whole lobster and lobster roll meal options. Yes, I’m greedy! Each came with potatoes and a piece of corn. So TASTY!

In addition to the Lobster Meal options, guests of the festival could also enjoyed lobster creations from several vendors. We’re talking Lobster Mac & Cheese, Lobster Fries, and Lobster Tacos! While noshing on your lobster be sure to stop and enjoy the live music line-up. This is even is family friendly so bring the kids! Did I mention that the Great American Lobster Festival is free to attend? Yes! Admission is free! You do have to options of purchasing The Lobster Meal Experience, which I highly recommend, or you can purchase food tickets to get food from any of the amazing vendors.

Coffee Shop Love: Buteco [Atlanta,GA]

Today my daughter and I stopped by Buteco in Atlanta to check out their espresso offerings. First of all, it’s a super cute place. Love the vintage Brazilian vibes! The inside is pretty cozy, but they have plenty of space outside to enjoy your coffee, cocktail, or delicious food.

Yes! They offer much more than just coffee! They also offer an authentic Brazilian food and cocktails. On this trip I just order a Dirty Chai, which was wonderful. My daughter went for an Ice Chai Latte, which she gave 2 thumbs up. I’ll definitely be back to check out the rest of the menu!

I Had My First 100 Layer Donut and Fell in Love with Five Daughters Bakery

Five Daughters Bakery recently opened their new location in Ponce City Market. I’ve been seeing the Instagram post about how delicious they were. Well I finally got to taste for myself!

They are known for their 100 layer donut, their version of a cronut. Yummm!! It takes them 3 days to craft this croissant donut hybrid, but well worth the time. When I took a look at the many delicious choices, the one that was screaming for my to take it home with me was the Lime Meringue. It was so cute with its toasted meringue, dusted with lime zest. Gimme! After paying and have a photo shoot, it was time to taste this 100 layers of deliciousness. Yummmmmm.

That first bite was amazing! The second bite was even more amazing. I loved the lightness of the donut. I loved that the lime custard inside was not too sweet. The meringue on top was perfect! I absolutely loved everything single bite of this donut. Bravo. Five Daughters Bakery.Bravo.

Dinner in the Dark with Pinnacle French Vodka

Last week, I was excited to be invited to a lovely French Vodka tasting. The event, hosted by Chef Jennifer Booker, was held at Atmosphere Restaurant Upon arrival, guest were invited to mingle amongst each other while sipping on the first cocktail of the evening, the Champagne Spritz. Initially I thought that it just a glass of champagne, later I was informed that it was actually the French vodka topped with champagne. It was quite tasty.

Dinner guest were told that this was a Dining in the Dark experience. So we would not be told the French Vodka name until the end of the three course meal prepared by Atmosphere’s Chef Adam Olejniczak. Plot twist! Usually at media dinners, we are given a ton of information about the brand prior to the event. I was actually enjoying the suspense.

FIRST COURSE

Poulpe en SALADE

Charred octopus salad with hearts of palm, Niçoise olives, fresh tomatoes, marinated anchovies, red onion, organic arugula, and lemon confit

Let’s just start by saying this salad was amazing! The flavors were light and vibrant, perfectly pairing with the slight sweetness of the vodka.

SECOND COURSE

Confit de canard Moulard

Duck leg confit cooked in the time-honored French tradition, wild mushroom raviolis, glazed baby carrots, French green beans, truffles red wine reduction.

Paired with: Southern Berry Bramble

Another deliciously successful course! Everything about it screamed delectable. The duck was well seasoned and every single component on the plate played its part. Bravo! The course was paired with another French Vodka based cocktail called a Southern Berry Bramble. It was very light and fresh with the flavors of summer.

THIRD COURSE

Atmosphère Profiteroles

Choux filled with French Vanilla ice cream, topped with warm chocolate, toasted Polignac almonds

Paired with: Le Orange Drop

Oh what a delightful way to end this meal. Let’s just say I ate every bite of this dessert. It was paired with another lovely cocktail with notes of citrus called Le Orange Drop.

No it was time to reveal the name of the French vodka we had the pleasure of sipping on all night.

1/2 oz honey

Juice of 1/2 lemon

Ginger Beer

Ice

Combine Pinnacle French Vodka, honey, lemon, rosemary sprig, and ice into shaker.

Shake.

Pour in glass over large iced cubes.

Garnish with a slice of lemon and a rosemary sprig.
