40 Tequila Cocktails You Should Be Sipping On Right Now!

Tequila originated in the city of Tequila in the 16th century. It is a regionally specific distilled beverage made from the blue agave plant. Since agave grows differently depending on the region, tequila typically varies in flavor. You’ll notice a sweeter aroma and taste from blue agave grown in the highlands Los Altos region. If you prefer a more herbaceous flavor profile, look for agaves harvested in the lowlands.

There are two main types of tequila, 100% Agave and Tequila Mixtos. Mixtos must contain no less than 51% agave with various sugars and additives making up the remaining 49%. From these two categories Tequila is typically bottled into one of five categories:

Silver – a white spirit, unaged and bottled or stored immediately after distillation.

Gold – an unaged silver Tequila that may be flavored with caramel coloring, oak extract, glycerin, or sugar based syrup.

Reposado – Tequila aged at least two months in oak barrels.

Añejo – Tequila aged for at least one year in small oak barrels.

Extra Añejo – Tequila aged at least three years in oak barrels.

Summer Cocktails: Strawberry Jalapeño Daiquiri 

Looking for something sweet with a little kick? I invite you to join me in this most fantastic situation. I’m currently on the porch, sipping a very delicious Strawberry Jalapeño Daiquiri. You should be too!

Strawberry Jalapeño Daiquiri   

Makes 1

5 strawberries 

3 slices of Jalapeño 

Juice of a 1/4 lime

2 oz white rum

2 tbsp sugar

1/2 cup ice
Throw everything into the blender.

Purée 

Pour into glass.

Garnish with strawberry and Jalapeño slice.

Proceed to porch.

Summer Cocktails:  Kiwi Cardamon Mojito

Traditionally, a Mojito is a combination of five ingredients:  white rum, sugar, lime juice, mint, and soda water. Those are great! If you can find a bartender who can make a perfect Mojito, you’ve found a friend. 

Today just so happens to be National Mojito Day! Oh yeah! I’m celebrating with something a little different, a Kiwi Cardamon Mojito! Trust me, you want one! The Cardamon plays very well with sweetness of the kiwi. Giving you a very unique sipping experience. Shout out to Mom for providing this beautiful mint that is currently flourishing in her garden!

Kiwi Cardamon Mojito 🥝

Makes 1

1 kiwi peeled and diced
6 mint leaves

2 tbsp sugar

4 Cardamon pods, crushes

Juice of 1/2 lime

Soda water 

1.  Muddle above ingredients in shaker.
2.  Add 1/2 cup ice and 2 oz white rum.
3.  Shake vigorously.
4.  Strain and pour into glass filled with ice.
5.  Top with soda water. 
Garnish with mint leaves and kiwi slices.

I love to cook with olive oil. In fact,  I use it every day. It’s pretty much a staple in my pantry.  Recently some concerns have been raised about the authenticity of olive oil here in the US. Today, I used Zucchi’s 100% Italian Extra Virgin Olive Oil in my recipe. I loved the flavor profiles of all the varieties I received. AMAZING!! I could totally see myself just dipping some freshly baked bread into a bowl of this awesomeness. It really is that good. I thought any one of these varieties would be perfect for this dish. This recipe is super easy and can be made in 30 minutes! 

Sweet Potato, Carrot & Kale Hash

6 servings

Ingredients

6 cup sweet potatoes, peeled and diced

2 cups fresh carrots, peeled and diced

2 cups onion, diced

2 cups kale, chopped and lightly sautéed 

1/4 cup Zucchi 100% Italian Extra Virgin Olive Oil 

2 garlic cloves, minced

1 tbsp Shawarma seasoning

1 1/2 tsp pink Himalayan salt

Directions

Combine all ingredients in a large bowl and toss.

Transfer to a large skillet and spread evenly.

Put in oven and bake of 20 minutes or until sweet potatoes are soft.

LocoNut & Chill

1.5 oz. Captain Morgan LocoNut

Pour 1.5 oz. of LocoNut into a shaker with ice. Strain into a shot glass.

Cocojito

1.5 oz Captain Morgan LocoNut

6 Fresh Mint Leaves, plus 1 sprig to garnish

3 oz Coconut Water

Muddle mint in the bottom of a tall glass. Add coconut water and LocoNut and stir to combine. Add ice to fill and garnish with a sprig of mint.

LocoNut Colada

1.5 oz Captain Morgan LocoNut

0.5 oz Captain Morgan Original Spiced Rum

0.25 oz Cream of Coconut

0.5 Pineapple Juice

Combine LocoNut, Original Spiced Rum, Cream of Coconut, and pineapple juice into a shaker and fill with ice. Shake vigorously and strain into a rocks glass filled with ice. Garnish with a pineapple wedge.

Today I’m making Baja Fish Tacos with Pickle Onions and Sriracha Slaw. Everything I needed was in the box, with the exception of mixing bowls and salt & pepper. They even send the recipes with a handy binder to keep it and future Home Chef recipes in. Along with the recipes are step by step instructions, with pictures and an explanation of all culinary terminology you may come across. I just love how detailed the Home Chef box was. It was simple enough for my 9 year old to understand. She actually did most of the prep work for it.

So like I said, we’re making Baja Taco!! And boy we’re they delicious! The fish had a light batter just enough to make nice crisp on it. It was topped with lovely Sriracha slaw and pickled onion. I enjoyed everything about these tacos. All of the ingredients were really fresh, which made the tacos even better.

The recipe included instructions for before and while you cook as well as notes from the chef, to makeyour meal  preparation experience enjoyable. My daughter enjoyed the “Did you know” section. There, we were entertained with a little culinary history. Just a side note, Home Chef is perfect to incorporate in a lesson plan, if you homeschool your child.

One other feature I loved about the Home Chef recipe is that it gave all the nutritional numbers right on the card. No need for guessing how many calories or fat your intaking. It’s all noted on the recipe card. 

Overall I loved my Home Chef Meal. I definitely would recommend Home Chef to anyone eager to get in the kitchen but doesn’t necessarily have a lot of time. It’s also great perfect for anyone learning to cook or those who want to amp their cooking game up a few notches. I personally loved that the simplicity of the recipes made it easy to share the experience with my daughter.

VEGAN FOR A WEEK DAY 2

So it’s day 2 of my Vegan eating journey, and I haven’t miss any of my everyday favorite foods. Like cheese to be exact. Not really missing meat either. It’s actually going really well.

Today, I started the day with a bowl of Bob’s Red Mill Old Fashioned Rolled Oats. I added some fresh strawberries and blackberries, a tablespoon of Silk Dairy-Free Yogurt and as well as a sprinkle of chia seeds. Now that was a bowl of awesomeness!

For lunch, I had some leftovers from last night’s awesone Jackfruit Tacos situation. I also made a Fennel Pear Salad that was amazing! I just love the smell and taste of fennel. Mmmmm. Fennel is the perfect compliment to any spring salad.

Fennel is a flowering plant species in the carrot family. It is a hardy, perennial herb with yellow flowers and feathery leaves. It is indigenous to the shores of the Mediterranean but has become widely naturalized in many parts of the world, especially on dry soils near the sea-coast and on riverbanks.

It is a highly aromatic and flavorful herb with culinary and medicinal uses and, along with the similar-tasting anise, is one of the primary ingredients of absinthe. Florence fennel or finocchio is a selection with a swollen, bulb-like stem base that is used as a vegetable. – Wikipedia

Fennel Pear Salad

Serving 1

1 cup spinach

1 cup arugula

1/2 pear, thinly sliced

1/4 cup fennel, sliced

1/8 cup chopped walnuts (optional)

Top with your favorite vinaigrette.

 

For dinner, my mom made Collard Greens, Black-eyed Peas, Sweet Potato Hash, and Vegan/Gluten Free Cornbread! All this on a Tuesday! It was so awesome! I enjoyed every bite!
